Everybody's Chocolate Fudge PuddingThis dessert is so quick and easy to whip up on a wintery evening to have 'straight from the oven with vanilla ice cream
Ingredients1 cup brown rice flour
¼ cup cocoa 1 heaped teaspoon gluten-free baking powder ¼ teaspoon baking soda ½ cup brown sugar 1 egg 1 cup buttermilk 2 tablespoons nut or olive oil ½ teaspoon vanilla essence oil spray Sauce
½ cup brown sugar ¼ cup cocoa 2½ cups boiling water MethodStep 1
Preheat oven to 175ºC. In a large bowl sift together rice flour, cocoa, baking powder and baking soda. Step 2 In a separate small bowl whisk sugar and egg together until creamy. Fold in buttermilk, oil and vanilla. Step 3 Make a well in the centre of dry ingredients and add egg mix. Slowly stir together until well mixed. Grease a shallow 1.2L ovenproof dish with oil spray. Transfer pudding mix into dish and smooth top to level. Step 4 To make sauce, in a small bowl whisk together sugar and cocoa. Add boiling water. Mix to dissolve and pour over pudding. Bake for 20 minutes or until cracks appear on top. |
